I do other things than make sweets, but lately, I’ve been a bit overwhelmed.
Also, I just love making treats to bring into work.
Potluck, birthday, I don’t care. I love it.
So, as I take time to plan all the blog surprises for October (yay birthday month!) here is an easy and delicious thing to make when you’re feeling like being in your kitchen.
Are you ready for the easiest thing you will ever make? Ever?!
Well here it is.
Ignore the oatmeal. That was my breakfast the next day.
When you make things at 11:30pm sometimes your brain thinks about oatmeal.
(gluten-free if you leave out the crust)
1 chocolate oreo pie crust
8 oz. cream cheese
1 c. peanut butter
½ c. granulated sugar
1 tsp. vanilla
8 oz. frozen Cool Whip, thawed
Two handfuls of chocolate chips
Beat cream cheese and sugar until smooth.
Add peanut butter and vanilla with beaters.
Using a spoon, fold in Cool Whip.
Glob it all into the pie crust.
Top with chocolate chips.
Lick the bowl. It’s that good.
Refrigerate at least 4 hours.
Store in fridge.
This was for a work potluck and two of my colleagues are gluten free… so I made them little PB Bites. 🙂
