Last night you got a preview of my dessert since my internet was broken. Mmmmm those cookies were good.
I have to say that dinner last night (and leftovers for lunch today) was an extremely successful paleo delight. Dinner was AIP friendly. Unfortunately the cookies weren’t but they were for me anyway. You will learn I cannot go without something sweet after dinner, even if it’s fruit. 🙂

Dessert was a last minute decision. I legit searched for a recipe on my phone and found these amazing treats. Blueberry chocolate cookies? Heck yeah!
Paleo day one was a complete success. I went to bed last night feeling full and happy.
Josh on the other hand isn’t faring as well. He had a headache all day yesterday and all night last night. I surmise that this is because he was previously eating all forms of carbs, sugars, sodas, etc. and his body has a bigger adjustment to handle than mine does.
Since performing in Legally Blonde, I was eating healthier with no grains at all (maybe cheating at night) and lots of protein.
I did have to cut out dairy though. That is what I miss most. Greek yogurt and string cheese how I long for you!
I’ve already looked up some yummy recipes to modify for tonight. PUMPED!
